Franchise owners Jennifer and Stephen Ashkinos of Sudbury, have been prepping the eatery and giving out samples to curious customers all week.

Jennifer, who grew up in Brooklyn and Long Island, said this Framingham location is the first of more than two dozen eventual locations in Massachusetts for the chain.

Using PH-balanced water, just like you would fine in Brooklyn, via a 14-step process, the Framingham store will make more than 800 dozen bagels a day or almost 10,000 bagels.

At The Original Brooklyn Water Company, customers can watch the bagels being made. Employees blend together flour, salt, yeast, the Brooklynized water into a rotating mixer. Then, employees move the dough into a machines that cuts and creates the ring-shaped bagel. The bagels are boiled to stop the yeast process and then baked.

Some of the bagel flavors include plain, poppy, whole wheat, sesame, multi-grain, rye egg, marble, asiago and cinnamon-raisin.

Bagels are $1.09 each and $10.98 for a baker's dozen. Butter, peanut butter and cream cheese extra.

Bagel breakfast sandwiches with eggs, sausages, cheese and vegetables are available in several combinations.

The company also makes muffins.

The company makes overstuffed bagel sandwiches, including a bagel-bread panini sandwich. Sandwiches start at $5.99. You can get a hot corned beef Bagelwich for $7.99.

Throughout the day there is a coffee bar. One unique feature is the iced coffee Cubsta, which features ice cubes made completely out of coffee, so your drink is not diluted.

Founded in 2009 in Florida, The Original Brooklyn Water Bagel Co. distinguishes itself from other “authentic New York” bagel franchises by using proprietary water technology that creates Brooklynized water. This advanced technology allows the company to produce authentic Brooklyn bagels anywhere in the world for its loyal customers.

The company has about 15 locations in Florida, California, Georgia and North Carolina. Larry King is the company's national spokesperson.
