Portable Pies A Success in Framingham

Newton-based business "Pie on the Fly" finds its place in Framingham.

“What if you put it in a cone?” were the eight magic words that sparked an idea and eventually, a business.

When Nancy Liverman was wondering what the most portable and convenient way to eat a pie was, her husband Irwin had suggested an ice cream cone. The Livermans have been attending the Farmer’s Market in Framingham for five weeks and have seen a lot of buzz and growing interest in their pie business, called, “Pie on the Fly.”

“I’ve always loved pie, and I knew I wanted to launch a food-based business,” Nancy said. Once her husband made the suggestion, the business was born.

Liverman, based out of Newton, travels to the Framingham and Dedham Farmer’s Markets once a week to generate business and interest in her product.

Liverman takes several homemade pie fillings and puts them in either a chocolate covered or regular waffle cone. The fillings Liverman brought to the Framingham market included apple cinnamon, with three different types of apple, mixed berry, key lime, which sold out well before the market was to conclude, and chocolate banana cream. All pie fillings are made with fresh fruit and other ingredients.

“You can definitely taste the difference,” Nancy said, “between fresh pie filling and the one that comes from a can." 

She also adds a crunchy item to each cone, called a “crunch factor,” to balance out the richness of the pie filling, including butter crust, granola and oreo. Topped with a swirl of whipped cream, each cone costs four dollars or five for a chocolate covered cone. The pie filling can be mixed, and it can also be packed to go if necessary.

Nancy said their goal is to provide their sweet product to cater all sorts of different events and parties, from anniversaries to birthdays and beyond. For now, the Livermans have enjoyed their experience at the Framingham Farmer’s Market and have also gone to the summer concerts in town to provide a sweet treat for residents enjoying the concert.

“No one has seen this,” Nancy said, “but once they try it, they like it.” The Livermans will continue to be at the Framingham Farmer’s Market on Thursdays, from noon to 5:30 p.m. at the Centre Common. For more information, visit their website at pieontheflycatering.com.
